Red chimichurri egg salad (on toast! Because…duh). Red chimichurri egg salad (on toast! Because…duh). I also add some tuna for a hit of pescatarian protein, but that’s absolutely your prerogative. What I love is that this is deeply flavorful, filled with just the right amount of crunch and texture with some onion, and a cousin to the egg salad, but in a bold-red-sauce kind of way.

A salad smoothie - something I’ve been making for A salad smoothie - something I’ve been making for years that is absolutely nothing like what it sounds like and is absolutely delicious. (think of her as a glorious dip)
