Shatter-Top Cauliflower Orzo! A low-waste recipe that I’m so, so proud of. Use an entire head of cauli, an entire quart of stock, an entire bag of orzo, plus garlic, chili flakes, preserved lemon and as much parm as you can handle (Olive Garden rules, stop when it feels right 😌)

No leftover ingredients, and for as minimal as it is, it is SO good. We’re really sleeping on how much flavor cauliflower has on its own. It’s not a blank canvas, especially when you caramelize it. I tested this with lemon zest and juice a few times, but the brininess of preserved lemon always won out against the sharpness of lemon juice. It’s there for a reason, trust me 🙏

I inhaled @inagarten’s memoir in one sitting, I inhaled two bowls of this soup right after.

Kabocha squash combines with fennel that is cooked down until it’s sweet but not anise-y, and chickpeas and farro make this deeply flavorful, but really simple soup….it might be my best of the year. I hope it would have fit in the Barefoot Contessa in the 80’s, but that’s not for me to decide 😉

If you’re going to let me cook at New York Food

If you’re going to let me cook at New York Food & Wine Festival, I’m going to bring my A-game #ad21+ @caymanjack invited me to develop a menu inspired by their Sweet Heat Margaritas, and I of course wasn’t going to pass it up 🍑

This is just one of the menu items - Honey Lime Adobo marinated Cod Skewers with a Charred Peach Salsa. The flavors are punchy, bright, and pack just a tiny *bit* of heat. The perfect pairing for a Sweet Heat Margarita (with the peach flavor being my favorite!).

There will be two places to taste the menu. First, Cayman Jack’s Rivercruise, tickets linked in my bio, and second, I’ll be serving these up at the Cayman Jack River Shack at NY Wine & Food Festival from 1-2pm on Friday!

I’d love to see you at either place, and if you can’t make it, this recipe is on my site as well if you want to pair it with a Cayman Jack margarita at home.
