Apple Tahini Toast

Apple tahini toast is one of the simplest, most beautiful, sweet and cozy fall breakfasts for me. Some of my other toasts can get pretty elaborate, but this toast knows exactly who she is: sweet baked apples, shiny honey almonds, bitter creamy tahini and a touch of lemon juice to balance it all out.

There’s no intense steps in this recipe, just one baking sheet and fifteen minutes of baking time. When it comes out of the oven you will have a perfectly crispy, slightly glossy, breakfast toast that is the epitome of apple pie in a bite.

Ingredients to make this tahini toast

The ingredients are minimal for this, but they are still so so good. Here’s everything I suggest to make 4 servings of this toast:

  • 1 large apple
  • 4 slices bread of choice
  • 2 tbsp tahini
  • 4 tbsp honey
  • 1/4 cup slivered almonds
  • salt to taste
  • lemon juice to taste

How to make this apple and tahini toast

The instructions are long, but only because I like to be specific! We are building this toast from the bottom up – think of it as upside-down apple cake. Here’s the details on how to make it:

  • Preheat the oven to 350F.
  • Thinly slice the apple into crescent slices. Make each slice as this as possible, since the goal is to lay them flat on the toast.
  • OPTIONAL: put your bread slices under a broiler for 2 minutes to get one side of the bread toasted. If you need to skip this step, that’s totally fine!
  • Spread a layer of tahini on each piece of bread. If you opted to toast the bread, spread the tahini on the toasted side.
  • Lay down a piece of parchment paper on a baking sheet. Sprinkle the sliced almonds on the sheet, creating a rough shape of the bread you are using. The bread will be placed on top of the almonds, so try to match the shape as best as possible.
  • Drizzle honey directly on top of the almonds, then layer the apples on top of the honey.
  • Place the tahini-side of the bread directly on top of the apple slices.
  • Bake for 13-15 minutes at 350F, remove when the side of the bread that you can see has started to toast, or when you see the honey has begun to caramelize.
  • Let the toasts rest for 2 minutes out of the oven, then flip over onto a plate and carefully remove the parchment paper.
  • Top with a squeeze of lemon juice and eat right away 🙂

Wait, why do we make the toast upside-down?

Besides loving the glossy-honey-coated reveal of the toast at the end of baking, there are a few other reasons that I love to make this toast “upside-down” – because I’m not just doing it to do it, I promise!

Reason #1 – It keeps the toast *toasty* – if we were to put the apples and honey on top, the honey and apple juice would seep into the toast during the baking process, making the toast slightly less crispy.

Reason #2 – It helps the honey caramelize on the almonds – think of it as toasting the almonds! The heat on the pan will go directly onto the honey and nuts, caramelizing the sugars and creating a deeper color, flavor and texture for the top of the toast

Reason #3 – The apples bake more quickly – they are closer to direct contact with the pan, helping them gather more heat and cook at a quicker pace.

So making this toast upside-down isn’t just for fun (but believe me, it’s still fun 😉 There’s a method to the madness, I promise 🙂

This upside-down apple tahini toast is like apple pie in a breakfast. It's sweet, crunchy, and subtly creamy from the tahini. The apple cooks perfectly in the oven making this a gorgeous, glossy (but still low-effort!) toast.

    I haven’t stopped thinking about this recipe for DAYS, but don’t like tahini, is there a replacement that you would suggest?

      Of course! I like tahini because it is a bit bitter, but any nut butter you like is a great sub!

    I’ve been making this with almond butter instead of tahini because it’s what I have, and it’s DELICIOUS. It’s my favorite breakfast on days I don’t have to go in to work. My only complaint is that I find the parchment paper does not peel off nicely at all; I always end up having to scrape all the honey and almonds off of it. But it’s worth it for the deliciousness 🙂

A sourdough recipe so easy that it made the captio A sourdough recipe so easy that it made the caption! Sourdough English Muffins, a mix it and forget it kind of dough 😌

Recipe:
100 grams activated sourdough starter (see my Low-Discard Sourdough Starter recipe on my site!)
238 grams milk at 90°F
20 grams maple syrup
210 grams bread flour
150 grams all-purpose flour (or whole wheat, if you want some extra flavor)
1 teaspoon @diamondcrystalsalt kosher salt
White cornmeal, for dusting

Mix together the starter, milk and maple syrup until foamy. Add the flours and mix with your hands to combine. Do a few scoops and folds of the dough in the bowl until the dough is smooth, then cover and let rise for 8-12 hours or until doubled in size and bubbling at the top. 

Move the dough to a floured surface, spread it into a rectangle and press down until it is 1-inch tall. Use a round cutter to slice into 8 even circles. Dust both sides of the circles in cornmeal. 

Set a cast iron or nonstick pan over LOW heat. In batches, cook the muffins for 5-7 minutes on each side, or until golden brown.

Mother Snacks’ Burnt Sweet Potatoes and Tomatoes Mother Snacks’ Burnt Sweet Potatoes and Tomatoes - my Thanksgiving obsession, adapted from Mason Hereford’s recipe in the @turkeyandthewolf cookbook (which you should buy! And visit!) 

His recipe is called Mom’s Burnt Tomatoes, and uses savory fried tomatoes that melt down together until they are lava hot. I followed suit in the belief that Burnt Tomatoes should be made by moms only, and the sweeter, sweet-potato version came next!

If the browning on top scares you, let me try to convince you otherwise. It’s a nearly crisped sugar top that you will break into at a nearly obsessive pace. Mini marshmallows (while great) could never. 

I can’t get enough of this recipe, it’s one of the few sloppy casseroles I believe in, and it’s now earned a place on my Thanksgiving table. Although if you want to make it on any near-frigid day, it’s perfect for that, too.

Cranberry sauce salad! For a world where cranberry Cranberry sauce salad! For a world where cranberry sauce *might* (ahem, MIGHT) be left behind. 

And I just always need a bright, crisp, cool salad to break up a big meal. This is part 3 of my Thanksgiving videos this year, and I’d argue my most important??

My rule is the simpler the salad, the better. Keep the veg in big beautiful wedges for the most gorgeous finger salad on the table (and yes, I’m team eat-salad-with-fingers), and finish with pomegranate wedges and goat cheese.
