Ricotta Toast with Blueberries and Hot Honey Walnuts

I’m going to keep is short and sweet with this ricotta toast recipe, because overall, this recipe speaks for itself. It is GOOD good. Juicy blueberries, hot honey walnuts and 2 minutes of prep time? Yes please. It’s the perfect summer toast. It requires minimal cooking (none if you have a toaster!), is ready in minutes and is the perfect balance of creamy, sweet and spicy. It’s super filling and one of my favorite breakfast ricotta toasts to whip up!

If you’re looking for ricotta toast recipes, it’s easy to get something way to complex, but this ricotta honey toast is just assemble-and-go. Here are all the details of how to make it:

What you will need for this ricotta hot honey toast

For the actual ricotta toast:

  • 2 slices whole wheat toast
  • 1 tbsp vegan butter – or regular butter, depending on your preference
  • 1/2 cup fresh blueberries
  • 1/2 cup walnuts – chopped
  • 1/4 cup whole milk ricotta cheese

For the hot honey:

  • 2 tbsp honey
  • 1 tsp Frank’s Red Hot
  • 1/4 tsp red pepper flakes

Optional:

  • salt & pepper to taste

How to bring this recipe together

  • Lightly spread the butter on one side of each slice of bread.
  • On a skillet on medium-high heat, toast the bread butter-side-down until it is lightly golden, about two minutes.
  • Flip the bread, turn off the heat and let the residual heat toast the other side.
  • Mix together the honey, Frank’s red hot and red pepper flakes to make a hot honey.
  • Pour this over the chopped walnuts and toss to combine.
  • Spread a thin layer of ricotta cheese on each slice of bread.
  • Top liberally with the blueberries, then the hot honey walnuts.
  • Add salt and pepper to taste if you prefer, but it doesn’t need it!
  • Enjoy whenever!

Blueberry Ricotta Toast with Hot Honey Walnuts

This ricotta toast is my ideal mix of sweet, spicy, creamy and fresh. It uses blueberries and hot honey walnuts to add some unique and filling summer flavor! Plus it's done in 2 minutes or less, barely any cooking and prep required!

Ingredients

Small (big??) update, we’re doing it again!

I’m hosting a trip next year with @viarosaitaly, this time to Puglia, and the link for the itinerary and the booking is in my bio.

This past week I had the pleasure (honestly, joy) of traveling with 12 women to Ortigia, Sicily. We covered a lot of ground, but it was the connection and inspiration I felt while surrounded with such like-minded women that was the best part. (If you are reading this girls, ily, and thank you for letting me talk so much about White Lotus).
