It is summer, and that means peaches, basil, crusty bread and burrata are calling my name. This Peach & Pistachio Burrata Toast is everything I love about a simple brunch. Grilled crispy bread, fresh basil, ripe peaches and crunchy pistachios all come together to give some seriously fresh flavor. All you need is a cocktail (make it a bellini if you want to get pretty meta) and you are good to go.

This peach and burrata toast was straight-up inspired by what was in my fridge. And that’s how I like to play it during the summer months. Use what is fresh, and use what you have.

This recipe is a great blank canvas for any summer fruits that you might have lying around. If you have a bunch of strawberries, definitely use them for this. Hell, even watermelon might be fantastic in this. This is truly a summer produce recipe at its core.

I’ve been really vibing with all the fresh ingredients this season (I might be a farmer’s market girl forever now) and that’s where this recipe started. Keep it fresh y’know?

A bit about the nuts on this peach and burrata toast

This recipe is also texture heaven. I love using pistachios for the subtle, nutty sweetness, but you can also use whatever crunch you think might fit best. If you have a nut allergy, sunflower seeds will also work great.

I also love using the lemon almonds on this toast, from my Green Goddess Pasta Recipe. They are super quick to make and super delicious on a peach and burrata toast. It’s one extra step, but very good if you’re going all-out for brunch!

How to adapt this peach and pistachio toast

If you’re feeding just yourself or have invited a crowd, this recipe can be so easily scaled up or down. You can also cut the bread into smaller pieces and make it an appetizer portion if you want. The versatility of this recipe is really what makes it the best for summer. It’s quick, adaptable and easy, and it won’t get in the way of everything you have planned for the day you make it.

Plus, if you don’t have peaches, burrata or pistachios on hand, each ingredient can be swapped for what works for you. Some good swaps are:

  • Pears instead of peaches
  • Ricotta instead of burrata
  • Lemon almonds, walnuts or pecans instead of pistachios

This toast is everything I love about summer. It's simple, fresh and refreshing, but has just the right amount of richness to be filling and a full meal. Plus, it makes me feel like I have my life together even when I did almost no work. A true Justine Snacks recipe!

Ingredients

  • 1 medium ciabatta roll sliced in half length wise
  • 2 tablespoons olive oil
  • 1 large peach
  • 1/4 cup fresh basil plus more for topping
  • Juice from 1/2 of a lemon
  • 1/4 cup pistachios shelled
  • 3 ounces fresh burrata

Instructions

  • Heat a skillet to medium-high heat. Brush the ciabatta liberally with olive oil.
  • Place each slice of bread face-down on the skillet and toast until they are golden brown, about 1-2 minutes max.
  • Dice up the peach, chiffonade the basil, chop the pistachios finely and add all the ingredients to a bowl. Squeeze in the lemon juice and toss to coat.
  • When the bread has toasted, spread the burrata on top.
  • Top the toast with the peaches mixture, plus more basil for garnish. Eat immediately!
