I found these gorgeous, bright pink breakfast radishes at the farmer’s market this weekend, and that’s when I knew it was time to do a Radish Greens Salad on Avocado Toast.

And if you’re not sure what a radish greens salad is, it means we’re using the radish, the full radish, and nothing but the radish. Radish greens are a peppery, spicy, leafy addition to any salad, but this salad makes them the main event. You just have to wash them really well, and they come out tasting similar to arugula. I paired them with a yogurt dill dressing that gives a nice creaminess to what is otherwise a lot of crunch, and it turns into an amazing, but simple, radish salad.

How to wash your radishes

This is a common question I get when I wash radish greens, because it can be a lot! The key is to wash them really well, but also dry them really well since dressing won’t really cling to any kind of soggy lettuce.

If you have a salad spinner for this, amazing. If you don’t, follow all the steps to the spinning part, and instead just pat the hell out of the greens with some paper towels.

What I like to do with my extra-dirty radishes is submerge them, greens and all, in a huge bowl of cold water. I usually do this in the bowl of my salad spinner, basket removed. Agitate with your hands to get off all the dirt and grime and pour out the water. Do this again until the water runs clear.

From here, move the radishes to a cutting board, but put the radish greens in the salad spinner basket and spin, spin, spin. Then voila! Clean greens!

Ingredients for this radish greens salad

Now that you have the cleanest radishes you ever did see, here is everything you need for the radish greens salad:

  • 1 bunch of radishes stems and bulbs, about 1 pound
  • 1/4 cup skyr or plain greek yogurt
  • 1 lemon for zest and juice
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh dill, finely chopped
  • Salt black pepper and red pepper flakes, to taste
  • 2 slices bread of choice
  • 1/2 large avocado
Dressing well-combined with EVOO

How to make the radish greens salad

This salad is so easy and goes with so many things. This recipe happens to put it on top of avocado toast, but don’t limit it to just that! Get creative with this salad because it’s delicious no matter what.

All you need to do is finely slice the radishes into half-moon pieces. Chop the radish stems into bite-sized greens. Set both to the side.
In a large bowl, add the yogurt, lemon zest, lemon juice, honey, olive oil, minced garlic and dill. Mix and add a pinch each of salt, black pepper and red pepper flakes. Season and adjust the salt, pepper and red pepper to your preference.
Add the radish slices and the radish greens directly into the bowl with the dressing. Use clean hands to give it a nice toss to fully coat the greens in the dressing.

Pairings for this radish greens salad

I paired this salad with avocado toast for crunch, texture and satiety, but you can pair it with so many other things. Here are a few ideas:

  • Serve with rice and crispy tofu for an easy vegetarian dinner
  • Serve with croutons and parmesan for a quick dinner party salad
  • Serve with lemony salmon for a classed-up dinner

But really, it’s a creamy, bright salad, so you can play around and pair it with almost anything that needs a little crunch and acid.

This salad-on-toast uses the whole radish, and I mean the whole radish, greens and all. It's such a phenomenal way to make sure you have no vegetable waste, and the salad itself is a dream. It uses a rich, dilly yogurt dressing and a creamy, crunchy avocado toast base to make a fantastic, easy and vegetable-forward plate.

Ingredients

  • 1 bunch of radishes stems and bulbs, about 1 pound

  • Finely slice the radishes into half-moon pieces. Chop the radish stems into bite-sized greens. Set both to the side.
  • In a large bowl, add the yogurt, lemon zest, lemon juice, honey, olive oil, minced garlic and dill. Mix and add a pinch each of salt, black pepper and red pepper flakes. Season and adjust the salt, pepper and red pepper to your preference.
  • Add the radish slices and the radish greens directly into the bowl with the dressing. Use clean hands to give it a nice toss to fully coat the greens in the dressing.
  • Lightly toast the bread slices, and add a generous smear of avocado to each.
  • To plate, take a large scoop of the radish salad and pile it high on the toast. You want this to be what I call a "fork-and-knife" kind of toast.
  • Top with more fresh cracked black pepper and enjoy!
