Cacao & Walnut Fudge Balls

Jump to Recipe Print Recipe
Finished Cacao & Walnut Fudge Balls

I make these Cacao & Walnut Fudge Balls at least once a week, they are SO good. And they are filled with amazing ingredients, making them one of my favorite raw, no-cook snacks. Also, I don’t mean to be that person, but they really do taste chocolatey and fudgey and amazing and delicious. Cacao and dates are best friends, so it’s that partnership that really makes this recipe taste like the brownie bites you get in Ben & Jerry’s – not kidding. These little fudge bites are the perfect snack, and you know I love snacks!

Ingredients for these cacao fudge bites

The ingredients are simple, and all things that you would find in your oatmeal bowl, which is why I have no qualms about eating this for breakfast. Here is everything you need:

  • 2 cups pitted dates, about 250 grams
  • 1 cup walnuts
  • 1/2 cup rolled oats
  • 1/4 cup flax meal or chia seeds or a mix of both! I like Garden of Life’s Flax + Chia blend
  • 3 tablespoons cacao powder or chocolate protein powder
  • 2 tablespoons maple syrup
  • 2 tablespoons plant milk
  • 1 cube of dark chocolate for shaving over the top
Ingredients added to bowl

Instructions for how to make these cacao fudge balls

These sweet treats are so simple and easy and are the perfect way to make sure you have a go-to snack for your busy work week. They’re rich, decadent and so satisfying. Here’s how to make them:

Tear the dates in half and add them to the food processor with the walnuts, oats, flax/chia, cacao powder and maple syrup. Drizzle 1 tablespoon of plant milk on top.

Process the mixture for a few minutes, pulsing every now and then, until all the ingredients form a cookie-dough-like texture. If your mixture ever needs a bit of help, add the additional 1 tablespoon of plant milk.
When you have a dark chocolate brown mixture, move it to a bowl and let it chill in the fridge for 5-10 minutes.

Then use a damp hand to roll the dough into 12 equal-sized balls. Shave some dark chocolate on top and eat!
You can either store these in the fridge for up to 2 weeks or in the freezer for up to 5-6 months.

Let's be honest, pecan pie is truly the BEST in the pie world, this is a hill I will die on. So this recipe uses dates to get the caramel-y pecan pie vibes, plus maple syrup for sweetness and graham cracker crumbs to imitate that incredible crust. A healthy, energizing and delicious way to get your pecan pie fix!

This easy winter snack makes the most of citrus season, and if you aren't freezing your oranges yet, you really should be. They turn into small, bright bites of icy sweetness, which paired with yogurt and a spiced protein powder, truly make the perfect easy snack.

Butternut Parmesan Bites
These little bread rolls are three main ingredients – flour, grated parmesan, and butternut squash. Boom, that’s it. This is such a fun dough to work with and you can pretty much shape it however you want – plus the sweet from the squash and the salty from the parm is just *chef's kiss*

Tinned Fish potatoes with @patagoniaprovisions, my Tinned Fish potatoes with @patagoniaprovisions, my favorite mussels out there and the ones we could eat daily. And yes, Patagonia makes food! It’s the first question I get asked when I post with them, but they make my favorite tinned fish out there! The mackerel is addictive and the mussels help to restore ocean ecosystems (and are delicious, too!). Definitely worth being your tinned fish of choice 💚

TAJIN FETA you heard me right!! 5-second feta dres TAJIN FETA you heard me right!! 5-second feta dressing is my everything, and tajín feta by @athenosfeta is also my new everything. #AthenosPartner

This roasty, charred and spicy cauliflower cooks down with jammy, salty tomatoes, the flavors were inspired by Athenos’ new Tajín feta crumbles (!!!) which are the base of this simple dressing that’s packed with flavor.

I’ve put these tangy, zippy feta crumbles in mini quesadillas, on avocado toast, in salads, and I think it’s their best invention yet. #FoodNeedsFeta and you can find this genius feta innovation at your grocery store! #AthenosPartner
