20-minute Chocolate Truffles

Not all of us are chocolatiers, and this chocolate truffle recipe is made for us. It’s rich, decadent, creamy and all the “truffly” things you love, but with almost none of the work. And none of the tricky ingredients!

It’s essentially just a simple ganache that we form into truffle form, and it only takes 20 minutes to do (and most of that is chilling time). It’s such a fun, simple dessert, and then my favorite thing is that you can decorate them however you like 🙂

The two ingredients you need for these homemade truffles

  • 113 grams chocolate of choice
  • 4 tbsp milk of choice

How to make these homemade truffles

  • Chop up the chocolate into shards.
  • Either in the microwave or on the stove, heat up the milk until it is scalding hot, almost boiling.
  • Pour the milk over the chocolate and stir until a ganache forms.
  • Let this mix sit in the fridge for 15-20 minutes, or until the ganache is firm enough that you can scoop it into bite-sized truffles using a cookie scoop.
  • Top the truffles with either matcha and sesame seeds, or dip them in yogurt and crushed nuts. Or mix it up how you like! Store them in the fridge and serve whenever.

Ways to top this truffle recipe

I love using these toppings for this recipe:

  • 1 tbsp ceremonial grade matcha powder
  • 1 tbsp black and toasted sesame seeds
  • 1/4 cup cherry flavored skyr
  • 2 tbsp chopped nuts

What I like to do is dust the matcha truffles with the matcha on top, then dip their bottoms in sesame seeds. It makes the truffles nutty, crunchy and a little caffeinated 😉

I also love to use creamy and thick cherry skyr as a coating for truffles. I add crushed nuts and edible flowers and they come out all cute, fruity and delicious 😍

A sourdough recipe so easy that it made the captio A sourdough recipe so easy that it made the caption! Sourdough English Muffins, a mix it and forget it kind of dough 😌

Recipe:
100 grams activated sourdough starter (see my Low-Discard Sourdough Starter recipe on my site!)
238 grams milk at 90°F
20 grams maple syrup
210 grams bread flour
150 grams all-purpose flour (or whole wheat, if you want some extra flavor)
1 teaspoon @diamondcrystalsalt kosher salt
White cornmeal, for dusting

Mix together the starter, milk and maple syrup until foamy. Add the flours and mix with your hands to combine. Do a few scoops and folds of the dough in the bowl until the dough is smooth, then cover and let rise for 8-12 hours or until doubled in size and bubbling at the top. 

Move the dough to a floured surface, spread it into a rectangle and press down until it is 1-inch tall. Use a round cutter to slice into 8 even circles. Dust both sides of the circles in cornmeal. 

Set a cast iron or nonstick pan over LOW heat. In batches, cook the muffins for 5-7 minutes on each side, or until golden brown.

Mother Snacks’ Burnt Sweet Potatoes and Tomatoes Mother Snacks’ Burnt Sweet Potatoes and Tomatoes - my Thanksgiving obsession, adapted from Mason Hereford’s recipe in the @turkeyandthewolf cookbook (which you should buy! And visit!) 

His recipe is called Mom’s Burnt Tomatoes, and uses savory fried tomatoes that melt down together until they are lava hot. I followed suit in the belief that Burnt Tomatoes should be made by moms only, and the sweeter, sweet-potato version came next!

If the browning on top scares you, let me try to convince you otherwise. It’s a nearly crisped sugar top that you will break into at a nearly obsessive pace. Mini marshmallows (while great) could never. 

I can’t get enough of this recipe, it’s one of the few sloppy casseroles I believe in, and it’s now earned a place on my Thanksgiving table. Although if you want to make it on any near-frigid day, it’s perfect for that, too.

Cranberry sauce salad! For a world where cranberry Cranberry sauce salad! For a world where cranberry sauce *might* (ahem, MIGHT) be left behind. 

And I just always need a bright, crisp, cool salad to break up a big meal. This is part 3 of my Thanksgiving videos this year, and I’d argue my most important??

My rule is the simpler the salad, the better. Keep the veg in big beautiful wedges for the most gorgeous finger salad on the table (and yes, I’m team eat-salad-with-fingers), and finish with pomegranate wedges and goat cheese.
