Whether you want something low-effort to keep away the chill, or you are looking for a project soup to work on while you watch the blizzard, one of these 13 soups is bound to do the trick. For a pantry staple soup – Perfect Chickpea Soup

As long as you have dried beans or chickpeas, it’s fair to assume you can make this soup. It does need a decent amount of simmering time, so leave your stove on and it’ll keep you warm in the kitchen.

I first learned how to make this soup in Sicily, where I had it at an olive farm and immediately had to ask the cook (an older Sicilian woman = good sign) on how it was made. Her answer shocked me, it's really just simple ingredients, a lot of good olive oil, and time. And the time is worth it, because even after days in the fridge, these are the most perfect chickpeas I've ever had.

To feel all cozy and warm – Kabocha Squash and Fennel Soup

This soup looks unassuming, but it’s anything but! Kabocha squash is wildly concentrated with flavor and nearly melts into this soup, while charred fennel brings caramelization and sweetness to the broth (10 out of 10 fennel haters agree!). It’s the best winter soup to make when you’re nearly freezing, because it feels like a hug in a bowl.

This soup is packed with flavor, and probably one of the best soups I've had this year. And I am not exaggerating. And that's because this soup uses technique to build flavor, from char-roasting the fennel and half of the squash to gather all their caramelized flavor, to toasting the farro before letting it boil into the soup, to finishing with heavy cream for the perfect texture. This soup uses everything I love about fall to create a rich, filling, and good -for-you meal.

For a rib-sticking and heartwarming (healthy!) soup option – The World’s Best Vegetarian Chili

If you’re hunkered down in the snow, a nice, hearty chili is sure to fix any cravings. This chili is bean-free, but a mix of sautรฉd tofu and quinoa gives you an uncanny chili texture – plus lots of protein. Meat eaters and veg eaters alike both love it (just check out the comments!).

This title sounds cocky, but this chili really is that good. It's packed with cozy flavor, warming spices, meaty textures – all with zero meat. It is bean-free, but I would never argue with you if you wanted to throw some black beans in here.

Sometimes you just need noodles – a lot of ’em. This brothy recipe is here for you, and it is also supremely easy to make. As far as soups to make in a snowstorm goes – I know these pasta-filled ones will always be at the top of my list.

This caramelized cabbage recipe is my ideal comfort meal. The recipe uses white beans and black cod for an extra layer of umami and protein, but if you aren't a fan of one or the other, they can easily be omitted and the recipe will be just as flavorful. When I'm looking for a rich, vegetable-filled soup, this cabbage "en brodo" (in broth) always satisfies!

For a comforting Chinese porridge that eats like the best soup you’ve ever had – Honeynut Squash Congee

When I’m looking for soups to make in a snowstorm, congee always comes to mind. Congee is a slowly simmered rice porridge, but with this recipe, it really doesn’t take that much time at all. Honeynut squash adds depth of flavor and a rich, luxurious texture, but the biggest perk is the subtle sweetness. The sweetness matches the savoriness of the stew, making this soup feel like a pile of diverse and satisfying flavor.

Honeynut Squash Congee with Poached Fish

This comforting congee recipe is a new take on the classic rice porridge. It's simmered slowly, but the process takes half the time of traditional congee, due to us starting with white rice. And while congee typically uses chicken stock, this uses water and finishes with a poached fish on top. Making it fully pescatarian, and still a full meal.

It's a favorite dinner of mine, full stop.

The sweet potato stays in chunks, but they turn into a texture that melts in your mouth, making this soup one of my favorite ways to use them.

This is one of those meals that I keep coming back to when I need comfort. It's hearty and filling, while still being nourishing and packed with seasonal vegetables. Feel free to use any white fish in this one, although I do love sablefish for its rich texture that feels like a mix between salmon and swordfish.

    Thanks so much for this! I definitely have a few ideas saved for this week, and a batch of the tomato soup already thawing for tonightโ€™s dinner.

    I will suggest an honorable mention, the honeynut squash and Brussels sprouts soup. It was the first recipe I ever made of yours, during a snowstorm 2 or 3 years ago.
