Blended Apple Cinnamon Oats

Just when you thought you had seen every type of way to make oats (we have baked oats! oat flour! egg white oats! steel cut oats! overnight oats!) there is now A NEW WAY TO MAKE OATS.

You heard me right. Breaking news. New oats. Welcome to my Oatly Fans.

These oats are BLENDED oats. And we aren’t just blending the oats into oat flour for this one. We are blending all the ingredients in the recipe! Think of it like a smoothie…..that you then cook into porridge. It doesn’t sound like it works, but it just does.

And the blending is the reason these oats taste like apple pie! When you blend all the apple pieces into the actual oatmeal, the flavor is fully distributed, making each bite taste like a warm piece of apple pie. Then add in some cinnamon, flax meal and maple syrup and you’ll have the most satisfying oatmeal bowl of all time. I love adding in egg whites for extra protein and satiety, but you can totally omit those to keep this recipe fully vegan!

And this whole recipe could not be easier. You can do it either on the stove top or in the microwave. Here’s the gist of how to do both!

How to make these blended oats in the microwave
  • Dice up your apple, set about 2 tbsp of the pieces to the side. Microwave the rest of the apple for 3 minutes or until all the pieces are fully softened.
  • Add your oats, cooked apple, cinnamon and flaxmeal to a blender. Add in the water and blend until you get a smooth consistency.
  • Pour the blended mixture into a microwave safe bowl and microwave for one minute at a time, stirring each minute. Do this for 3-5 minutes or until you reach your desired thickness. The oats will be clumpy at the 1 and 2 minute mark, but after the 3 minute mark they will start to become smooth and creamy.
how to make the blended oat on the stovetop
  • Dice up your apple, set about 2 tbsp of the pieces to the side. Cook the apple in 2 tbsp of water in a skillet on medium heat. It will take about 3-4 minutes to get all the apple pieces fully softened.
  • Add your oats, cooked apple, cinnamon and flaxmeal to a blender. Add in the water and blend until you get a smooth consistency.
  • Pour the blended mixture into a small pot. Bring the stove to medium heat and cook the oats for 4-6 minutes, stirring constantly until you reach your desired thickness!

After you’ve cooked your oats in either the microwave or on the stove, take the oats off of the heat and stir in the maple syrup. Top them with the apple pieces you set aside, plus extra cinnamon, flaxmeal and flakey salt! And that’s it! You’ll want to serve this bad boy warm 🙂

Toppings for these oats

Don’t feel like you are set to a certain type of toppings or mix-ins for this oatmeal bowl. You can really add whatever you want! I have some personal favorites that go perfectly with the apple pie flavor, but here are some great mix-ins that people like to try:

  • Chia seeds – make sure to soak them in water first! Dry chia seeds wreak havoc on digestion!
  • Almond butter – I love Fix & Fogg brand!
  • Banana slices – you can never go wrong
  • Dried cranberry – the tartness just adds something extra
  • Dried cherries – ditto
  • Walnuts – I think apples and walnuts are a match made in oatmeal heaven
  • Almonds – ditto
  • Crushed graham crackers – these will give your oats SERIOUS apple pie energy!
  • Raisins – these always feel like a great pairing with apple to me, I’m not sure why!
  • Almond milk or oat milk – pouring a splash over the top adds a nice creaminess imo

Need I go on? You can really go crazy here!

Can I use other fruit besides apples?

The short answer to this is – Yes! But there are some fruits I’d steer clear of using.

The fruits I recommend are:

  • Cherries
  • Strawberries
  • Blueberries
  • Pears

The fruits I’d avoid are:

  • Banana
  • Oranges
  • Grapefruits
  • (any citrus really)

Blended Apple Cinnamon Oats

Just when you thought you knew every way to make oats – there's another one! These oats are blended up with the apple and THEN cooked. Making them creamy, smooth, thicc (with TWO c's!) and tasting like an apple pie. You can even add in egg whites at the end for some extra protein, and they might just become the best oats you've ever had!

Ingredients

  • 2/3 cup rolled oats
  • 1 medium apple
  • 2 cups water
  • 1/2 tsp cinnamon plus extra for topping
  • 1 tbsp maple syrup
  • 1/2 tbsp flax meal
  • 2 large egg whites optional
  • 1/4 tsp flakey salt for topping, optional

Instructions

  • Dice up your apple, set about 2 tbsp of the pieces to the side. Then microwave the rest of the apple for 3 minutes OR cook it on the stovetop for 3-4 minutes to get all the apple pieces fully softened.

This isn’t a recreation, but instead a vegetarian (the original has pork sausage), sinlge-serving, almost cheesy-tasting variation. I used cornmeal for a little more substance and density, more spices than I can count (they’re all worth it, I promise), and a 6-minute egg, which when enclosed in the batter, stays jammy even after baking 🥚

SNACKS + CHEF! Today @ayesha_rare invited me int SNACKS + CHEF! 

Today @ayesha_rare invited me into her kitchen at @shukettenyc, one of my favorite places in NYC (and on the NYTimes top 100 list, NO BIG DEAL). 

If you haven’t been to Shukette, they are famous for their small plates, shareable menu and signature “rip & dip” style. Ayesha shared her famous pita recipe (look for that PUFF) and their smoked Arctic char dip - which, yes, I do pick favorites, and yes, that one is it 😍

I’m by no means a professional, so whenever I get to cook with one it’s the most fun thing in the world. As for the recipes, well, you’ll have to check in with Ayesha for those 😎 

**PS the audio might be less than great, but we were in a professional kitchen! With professionals! I’d sacrifice audio for pita any day 🙏

What is essentially Pizza Toast, but all-grown-up. What is essentially Pizza Toast, but all-grown-up. Because a singular anchovy makes everything better. (Also my sourdough was just dying to be put to use)

The full recipe is on the blog, done in 15 minutes or less, and just really delicious. Although tbh my younger self would probably still prefer the microwaved version, which tbh I respect.

Gift giving is not my love language, I’m more of a words of affirmation girl, so I wanted to make this video (and this cake!) my birthday present 🥹

This is the “Ashley’s Birthday Cake” recipe from @joannebchang’s book, Pastry Love. I used just traditional buttercream recipes for the chocolate, peanut butter and vanilla bean buttercreams. Oreo crumble was added, because you all insisted 😌
