These almond butter cookies are absolute MAGIC. They are four ingredients, super thin, sweet and crisp, but use absolutely NO flour. I’m still shocked.

These almond butter cookies are absolute MAGIC. They are four ingredients, super thin, sweet and crisp, but use absolutely NO flour. I’m still shocked. The only things you need for these cookies are:

  • almond butter
  • brown sugar
  • 1 large egg
  • Baking soda
  • And slivered almonds and chocolate if you are feeling ~extra~

If we look at the science of it – the egg adds the structure, the sugar contributes to the spread, and the almond butter is the binder – but still somehow when I make it my brain always goes…but how?

One big thing to know is that these spread out in the oven like crazy. Be sure to only do tiny scoops to avoid any #drama.

These cookies are SO crispy, SO easy and are ready in minutes. And no flour?? I'm still shook at this magic cookie recipe.

Servings: 16 cookies

Ingredients

  • ½ cup creamy raw almond butter, the more drizzly the better!
  • â…” cup brown sugar
  • 1 large egg or flax egg
  • Pinch of salt
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • â…“ cup slivered almonds
  • ½ cup chopped dark chocolate

Instructions 

  1. Mix everything together in one large bowl.
  2. Scoop into tiny balls, about 1/2 tbsp is more than enough. These will spread out a ton in the oven so be careful!
  3. Bake at 350F for 9-10 minutes.
  4. This will make 15-16 cookies.

    These are INCREDIBLE. I require a little sweet after the baby’s bedtime but try not to indulge. While I wouldn’t call these “healthy,” maybe more nutritious than other cookies I could be having on a daily basis. I added slivered almonds, chocolate chips and some heath pieces. SO GOOD.
