Miso Maple Upside-down Toast

This is my love letter to cinnamon toast, but with a few grown-up tweaks. It's so simple, salty-sweet, and insanely good. Pull this recipe out for cozy weekend mornings or for when you need a sweet snack!

Ingredients

  • 2 slices bread of choice
  • 1 large pear thinly sliced
  • 1 tablespoon melted butter
  • 1 tablespoon miso paste
  • 1 tablespoon maple syrup
  • 1/4 teaspoon cinnamon
  • 1 teaspoon sesame seeds

Instructions

  • Set the oven to 350°F.
  • Lightly toast your bread slices. They'll go in the oven later, so toast them just a bit for now.
  • Very thinly slice the pear. If you have a mandolin, use that, but otherwise, good knife skills can do the trick! The slices can be any shape or size, but you want them to be as thin as possible.
  • Mix together the butter, miso, maple syrup and cinnamon. It should form a paste.
  • Place a piece of parchment paper down on a baking sheet and use a brush to spread a thin layer of the miso mixture on the parchment paper. Make sure it is the miso layer is the same size as the bread you are using.
  • Layer the pear slices on top of the miso layer, and then place the bread on top.
  • Bake at 350°F for 10 minutes or until the sugars begin to caramelize.
  • Flip the toast over, parchment paper included. Let it sit for a few minutes before slowly and gently pulling off the parchment paper to reveal the toast.
  • Top with sesame seeds and eat right away :)
