Smoked Salmon Bruschetta

This is a play off of a classic bruschetta, but it adds a bit of flavor with salty cured salmon and a few extra spices. It's simple, fresh, easy to make and absolutely delicious.

Ingredients

  • 2 slices ciabatta bread
  • 3 ounces smoked salmon
  • 8 ounces cherry tomatoes
  • 1 handful of fresh mixed herbs, I used mint, basil and thyme
  • 1/4 tsp each of coriander and cumin
  • 1 tbsp olive oil
  • 1 tsp fresh lemon juice
  • 1 clove garlic
  • salt and pepper to taste

Instructions

  • Begin by toasting the ciabatta bread.
  • Cut the tomatoes into quarters and add to a bowl. Roughly tear the herbs and add them in as well.
  • Add the spices, olive oil, and lemon juice. Grate in the clove of garlic and toss. Season to taste.
  • Layer the smoked salmon on the ciabatta first, then top with the tomato salad.
  • Add more herbs if desired and a crack of black pepper and serve!
