Za'atar Tofu Sandwich with Harissa Carrots & Mashed Lemon Dill Chickpea Avocado

If you are craving a hearty, filling, vegan sandwich packed with flavor - this is it. This sandwich uses distinct Middle Eastern spices to create a balanced, spicy, umami flavor explosion. Plus it is packed with protein, carbs and healthy fats, making it the perfect easy lunch or dinner. I rarely pick favorite recipes, but this one is definitely top of my list!

Ingredients

  • 4 rolls of ciabatta bread or any sandwich roll you have on hand!
  • 1 large avocado ripe
  • 1 cup canned chickpeas drained and rinsed
  • 2 tbsp lemon juice
  • 1/4 cup dill minced
  • 400 grams raw carrots chopped
  • 1/2 tbsp harissa powder
  • 1/2 tbsp smoked paprika
  • 1 tbsp olive oil
  • 15 ounces firm tofu about one block, drained and lightly pressed
  • 1/3 cup za'atar spice
  • Salt & pepper to taste

Instructions

  • Preheat your oven to 425F.
  • Chop the carrots into small pieces, each about the length of a matchstick and a centimeter wide. Toss them in the olive oil, harissa powder and paprika. Season with salt and pepper and set aside.
  • Lightly pat the tofu with a paper towel and cut into thin slices, about 1-2 inches in length. Coat each piece of tofu with za'atar spice, making sure they are well coated.
  • Place the tofu on a parchment or foil lined baking sheet. On another parchment or foil lined baking sheet, spread out the carrots. Bake both at 425F for 20-25 minutes.
  • Add the avocado, chickpeas, lemon juice and dill to a bowl. Season with salt & pepper and mash until you get a semi-smooth consistency.
  • Toast your rolls (if you are doing this for meal prep - only toast one roll at a time, or as you need it!)
  • To assemble, top the roll with a generous spread of the avocado mash, then the carrots, then the tofu. Hot sauce would also be a great addition here!
  • This will make four servings, you can save the carrots, tofu and avocado mash separately, and then assemble when you need it! Everything should keep in the fridge for about 5 days.

Notes

A big tip for storing the avocado mash is to pack it down in an airtight container, then cover completely with plastic wrap. Press the plastic wrap down on top of the mix so that no air can get to the avocado. This will help prevent any oxidation that might cause the avocado to brown!
