I love summer recipes more than anything, and this Za’atar Crusted Peach & Tomato Toast is one of those perfect warm-weather recipes. It’s just your normal toast, but it has an extra layer of crunch and flavor from an olive-oil-based za’atar crust that is delicious beyond words. It makes this toast a total flavor bomb, but also a treat. And I rarely use the word treat, because treats have to be very warranted, but this toast fits the bill.
This peach and tomato toast earns the title of delicious and wholesome because it combines all of my favorite things – pan-crusted toast, melty burrata, fresh juicy peaches and sun-ripened tomatoes. Make it for your next summer brunch and watch as the compliments roll in. People will say it’s a treat too!

What is za’atar?
Za’atar is one of my absolute favorite spice mixes. It varies from region to region but consists of a family of Middle Eastern herbs. Most za’atars will typically include oregano, basil, thyme, sumac, sesame seeds and salt. It has a rich, herbaceous flavor and adds an interesting depth and complexity to any dish – even though it’s just one spice mix! I love putting za’atar on focaccia or as part of this tofu recipe.
Ingredients for this peach & tomato toast
- 2 slices sourdough bread
- 1 small heirloom tomato
- 1 small yellow peach
- 2-3 tablespoons extra virgin olive oil
- 1 tablespoon za’atar
- 4 ounces burrata
- 2 sprigs fresh basil
- flakey salt and fresh cracked black pepper to taste
How to make this summer tomato toast
This toast is quick, but it’s all about timing.
First, thinly slice the heirloom tomato and peach into circular pieces. Set these aside.
Put a pan that has a tight-fitting lid on medium heat and add a generous glug of olive oil. Let this heat up before adding in the slices of bread. The bread should sizzle when it hits the pan (of course!)
Drizzle more olive oil on the sides of the bread facing up, and then rub in 1/2 tablespoon of za’atar seasoning on each slice. When the bottoms of the slices are golden brown, flip them over so the za’atar side is on the pan. Turn the heat to low.
Add 2 ounces of burrata to each slice of bread, and quickly cover the pan with its lid. This will steam and melt the cheese.
Let the cheese melt for about 1-2 minutes, and then transfer the toast to plates.
Top with tomato slices, peach slices and fresh basil. Sprinkle on salt and pepper and eat immediately.
