Preheat the oven to 400F.
Chop and seed all of the vegetables. Make sure they are all in pieces around the same size.
Toss all the vegetables in the olive oil and a dash of salt and roast at 400F for 20 minutes or until they are soft and slightly charred.
Let the vegetables cool for 5-10 minutes, then put them in a blender with the apple cider vinegar and maple syrup. Blend until smooth, adding water to thin it out if needed.
Season with salt and pepper to taste, and that's it!
