Toast the bread to your liking and set aside.
In a small bowl, whisk together the burrata, honey, salt and pepper until creamy. Taste and adjust seasonings to your liking.
Spread a thin layer of the burrata mixture onto each piece of bread.
Grate lemon zest on top of each piece of toast. Then cut the lemon in half and squeeze about a teaspoon of juice onto every slice.
Top the slices with fresh thyme and more pepper.
Serve immediately :)
