Bagel with Charred Scallions & Lemon Almonds

This charred scallion bagel is like a bagel & scallion cream cheese, but all grown up. There is texture, acid, creaminess and saltiness all rolled up into one perfect bagel bite. Once you start charring your scallions, you won't go back.

Ingredients

  • 1 large whole wheat bagel or bagel flavor of choice!
  • 4 small scallion stalks whole
  • 1 tsp avocado oil
  • 2-3 tbsp sliced almonds
  • 1/2 large lemon for juice
  • 1/4 tsp salt or salt to taste
  • 1 tbsp cream cheese of choice I love Kite Hill if you are plant-based or interested in impact-minimizing products!
  • 1/4 cup sharp gouda grated

Instructions

  • Set your oven to broil on high.
  • Slice the bagel lengthwise and place it on a baking sheet with the inside facing up.
  • Put the baking sheet under the broiler for 2-3 minutes or until the bagel is lightly toasted. Ovens vary so keep an eye on it! You can also do this in a toaster or toaster oven.
  • On a separate baking sheet, evenly space out the scallion stalks and the sliced almonds. Brush the scallions with a small amount of avocado oil.
  • Squeeze lemon juice over both the scallions and almonds. Season with salt.
  • Remove the bagel from the oven and place the scallions and almonds under the broiler. Broil for 3 minutes or until the almonds are toasted and the scallions have visible char lines.
  • Use a serrated knife to slice the scallions into 1' pieces, removing the ends.
  • Spread a thin layer of cream cheese on both sides of the bagel. Place the scallions, then the almonds on one side of the bagel.
  • Grate the gouda on top of the scallions and almonds, and place that half of the bagel under the broiler for 1 minute to melt the cheese.
  • Top the melted cheese side with the other side of the bagel, slice in half and eat warm!
