Spicy Kale & Cabbage Salad

This salad is easy to make, easy to prep and actually gets BETTER the longer that it's dressed. It takes a few minutes to make the dressing and even less time to toss the salad. Plus the beauty of salads? You can totally make it your own. Mix and match how you'd like!

Ingredients

For the dressing:

  • cup cashews
  • Juice from 1 lime
  • 1 tablespoon grated ginger
  • 3 tablespoons soy sauce
  • 2 tablespoons sambal
  • 1 tablespoon maple syrup
  • 1 tablespoon cilantro
  • 2/3 cup boiling water

For the salad:

  • 5 cups kale
  • 2 cups red cabbage shredded
  • 1/3 cup shaved almonds
  • 2 tablespoons hemp seeds for topping

Instructions

To make the dressing:

  • Either on the stove in in the microwave, bring your water to a boil. In the microwave, this should take about 2-3 minutes.
  • Toss the rest of the ingredients in a small blender.
  • Pour the boiling water over the ingredients and let it sit for 2-5 minutes or until the water has cooled to about room temperature.
  • Blend the mixture until smooth.
  • Adjust the sweetness and salt to taste using maple syrup and soy sauce, and use whenever!
  • Store in an air-tight container or jar in the fridge. This dressing will last for 7-10 days.

To assemble the salad:

  • Toss the kale and cabbage in a large bowl, make sure the bowl has extra space in it for mixing.
  • Add the dressing to the bowl and lightly massage it into the kale and cabbage. This will break down some of the tough fibers in the greens.
  • Switch to using tongs, and toss in the almonds.
  • When you serve, top with hemp seeds after plating.
