Sriracha Lime Air Fryer Tempeh Bowl

If you are looking for a hit of flavorful protein that is crispy, spicy and perfect for meal prep, this lime sriracha tempeh bowl is it. It takes 10 minutes to prep, gets crispy in the air fryer and is a great addition to any salad or nourish bowl.

Ingredients

  • 12 ounces tempeh
  • 2 cups frozen edamame shelled
  • 1 cup fresh corn kernels
  • 2 tbsp sriracha
  • juice from one lime
  • 1/2 tsp kosher salt

Instructions

  • Set your air fryer to 400F.
  • Crumble the tempeh in a large bowl. Make sure no piece is bigger than a 1'x1' cube.
  • Add the edamame and corn to the tempeh. Toss to combine.
  • Add in the sriracha, lime juice and salt and toss again until the mixture is well coated.
  • Spread out the tempeh, edamame and corn evenly in an air fryer basket. Make sure not to crowd the basket, cooking in two batches if necessary.
  • Cook for 10-14 minutes at 400F. Take it out when the edamame and tempeh are slightly charred.
  • Let cool and serve!
