Ingredients

For the ginger hot honey:

  • 1 teaspoon neutral oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon coriander
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1 tablespoon sriracha
  • 1/4 cup honey

For the halloumi and peach skewers:

  • 6 ounces halloumi sliced
  • 1-2 large peaches firm, not ripe

Instructions

  • In a saucepan on medium-high heat, add the neutral oil and the ground ginger, coriander and red pepper flakes. Use a wooden spatula to bloom the spices for 1-2 minutes or until aromatic.
  • Then reduce the heat to medium, add in the salt and honey and let the honey simmer slightly. Stir constantly.
  • Add in the sriracha and stir until combined. Let the sauce reduce for 1-2 minutes before removing it from the heat.

For the skewers

  • Gather skewers that are 6 to 8 inches long.
  • Slice your peaches into wedges, and slice the halloumi into 1" by 1" pieces. Try to have the peach slices and the halloumi be the same thickness. This is so that when you grill them, an equal surface area will be touching the pan.
  • Assemble each skewer by alternating between peach slices and halloumi slices. Make it so that the skewers can lay flat in the pan.
  • Put a skillet on medium-high heat. Once warm, add the skewers to the skillet and cook for 2 minutes on each side or until the peaches are slightly charred and the halloumi is a rich golden brown.

To assemble:

  • Remove the skewers from the heat and immediately drizzle the hot honey on top.
  • Serve either on the skewer or off, and enjoy!
