Classic Brunch Waffles

These waffles are everything I love about the weekend. Fluffy, crispy, crunchy edges and a soft middle. These are sweet, rich and perfect for a lazy brunch.

Ingredients

  • 1 cup all-purpose flour 150 grams
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 cup almond mik or milk of choice
  • 1/4 cup melted butter I used Country Crock plant-based brand
  • 1/2 tablespoon vanilla extract
  • 1 tablespoon cane sugar
  • 1 large egg or flax egg

For serving

  • 1/4 cup maple syrup
  • 1/4 cup butter softened

Instructions

  • Whisk together the flour, baking powder, baking soda, cinnamon and salt.
  • Add in the melted butter, almond milk, vanilla, salt and egg. Whisk by hand until well combined.
  • In a lightly greased waffle iron, cook the waffles until golden brown and crispy (this will be slightly longer than the waffle iron calls for).
  • Serve immediately with your favorite toppings.
