Baked Apple Oats

I love a good baked oats recipe (hellllooo cake for breakfast? cake for breakfast.) but I noticed almost every recipe uses banana. So for those of us who don't always love banana, I wanted to share this apple version! All you need is apple, oats, eggs and a few more ingredients and you'll have the best breakfast you've ever had. Period.

Ingredients

  • 1/2 cup rolled oats 40g
  • 1 large egg
  • 1 large egg white
  • 1 medium apple, diced 100g
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 1 pinch salt

For an optional streusel

  • 1 tbsp slivered almonds
  • 1 tbsp brown sugar loosely packed
  • 1 tbsp rolled oats
  • 2 tsp olive oil

Instructions

  • Preheat your oven to 350F.
  • Put the diced apple in a microwave safe dish and heat on high until soft, around 2-3 minutes. You can also do this on the stovetop if you'd like!
  • Add the cooked apple, oats, egg & egg white, baking powder, cinnamon and salt to a blender. Blend until smooth.
  • Add all the ingredients to a small baking dish, I recommend either a mini dutch oven, a mini pie dish (which is what I used) or a small loaf tin.
  • In a small dish, whisk together all the ingredients for the optional streusel topping. Gently pour that evenly on top of the batter.
  • Bake for 20-25 minutes or until you can insert a toothpick and it comes out clean. Eat immediately!
