"The" Egg White Oatmeal

The long and short of it is, this oatmeal broke the internet. Now some people have been doing egg white oatmeal for ages, and some have just heard of it. But I'm pretty sure you've never heard of blended egg white oats, and that's where this recipe comes in!

Ingredients

  • cup oats blended into oat flour
  • 1 1/2 cups water
  • 1 tbsp flax meal
  • ½ tbsp cinnamon
  • 1 tbsp maple syrup
  • 2-3 large egg whites your preference
  • 1 tbsp dried cranberries optional
  • 1 tbsp dark chocolate optional
  • 1 tbsp coconut flakes optional

Instructions

  • Add your blended oats to a large bowl. Pour in the water and stir until there are no clumps.
  • Microwave the oats on high for 1 minute at a time, stirring each minute. For minute 1 & 2, the oats will look clumpy, but stir and continue microwaving and on minutes 3, 4 & 5 it will begin to smooth out.
  • I typically microwave my oats for 4 minutes total, but can go up to 5 depending on how well they thicken up.
  • As soon as they come out of the microwave, add the egg whites while the oats are still warm. Stir vigorously, breaking up the egg whites in the oatmeal and evenly dispersing them. As you stir, you'll see the egg whites begin to "cook" in the heat of the oats. If you stir fast enough, quickly whisking for about 1 minute, your oats will froth up and you won't even notice the egg whites besides a thick and creamy texture.
  • Add some water gradually if you see your oats start to thicken too much. This is up to your preference. Add the flax, cinnamon, maple syrup and continue to stir.
  • Once you've reached the desired thickness, top with your preferred toppings and enjoy!
