Apple Pancakes

Easy, filling, wholesome, everything you want in a pancake is now here! By far my first and most famous recipe.

Equipment

  • Medium sized pan
  • blender

Ingredients

  • 1 medium apple, diced
  • 1/3 cup old-fashioned oats about 37g
  • 1 large egg
  • 1 large egg white
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1 pinch salt

Instructions

  • Take your diced apple and either microwave it for 3 minutes or cook it on the stovetop until it is soft.
  • Add the oats, egg, egg white, baking powder, cinnamon, salt and soft apple to a blender. Blend until fully smooth and very thick.
  • Cook on a greased skillet on medium heat until golden brown on each side (about 2 minutes), and serve immediately with your favorite toppings!

Notes

Now the key thing to note here is the cook temperature and time. 
My best tip is to set your pan to medium heat while you're blending your ingredients, and just let it hang out for a little bit. This helps avoid that dreaded "first-pancake-flop" that we all get when you add your first pancake to the pan when it's not quiiiiite hot enough. 
What you want here is to cook all your pancakes at the same consistent temperature. For this recipe the temperature will be a little lower than normal pancakes, but that's just because they need a little more time to cook through. Let them chill on the pan for about 2 minutes, flip them when they are golden brown and that should turn into the perfect pancake!
