Frozen Citrus Yogurt Bark

This easy winter snack makes the most of citrus season, and if you aren't freezing your oranges yet, you really should be. They turn into small, bright bites of icy sweetness, which paired with yogurt and a spiced protein powder, truly make the perfect easy snack.

Ingredients

  • 1 small cara cara orange
  • 1 small blood orange
  • 1/2 grapefruit
  • 1/8 tsp each of ground cardamom, anise & clove
  • 1/4 tsp ground cinnamon
  • 1 & 1/2 scoops vanilla protein powder about 60 grams, I like using Garden of Life brand
  • 1/3 cup cool water plus more as needed
  • 1 tbsp honey
  • 1 cup greek yogurt, skyr or labneh plus more as needed

Instructions

  • Thinly slice your citrus, removing the skins so that you have hexagon shaped pieces.
  • Lightly toast your spices on a dry pan and add them into a large bowl with the protein powder and water. Stir to combine into a thick paste. The amount of water needed will vary based on your preferred protein, so add more as needed!
  • Mix together the honey and yogurt.
  • On a parchment lined baking sheet, dollop alternating scoops of the protein powder and yogurt. Swirl together with a knife until you have a surface that is about 1/2 cm thick.
  • Spread the citrus on top of the yogurt. It can overlap in places, but the design is up to you!
  • Freeze for 6-12 hours, then slice into 12 even pieces and serve!
