White Ginger Cookies
The most untraditional of Christmas cookies, because these ginger cookies don't use any molasses. Revolutionary, I know. But also equally delicious. It's like a sugar cookie mixed with spiced ginger, a big crowd pleaser in my house!
Ingredients
- 1 cup packed all-purpose flour 135g
- 2 tbsp cornstarch
- 1 tsp baking powder
- ⅛ tsp salt
- ¾ tsp ground ginger
- ¼ tsp ground clove
- ¼ tsp allspice
- 8 tbsp butter or vegan butter
- ¼ cup granulated sugar
- ¼ cup brown sugar packed
- 1 tbsp almond milk
- ½ cup candied ginger pieces optional
- Sugar for topping optional
Instructions
- Preheat your oven to 400F.
- Cream together the butter, sugar and milk until fluffy.
- In a separate bowl, whisk together the dry ingredients, then gradually fold it into the wet ingredients.
- Add in the candied ginger pieces and mix.
- Roll into equal sized balls and dip the tops in sugar before placing on a parchment lined baking sheet.
- Chill in the fridge for 15 minutes.
- Bake for 10-13 minutes.
- Put the cookies on a cooling rack right when they come out of the oven.
