This toast breaks a few of my toast rules, but I love it. This is a play on bruschetta, using a salty smoked salmon as an extra layer of texture and flavor. Of course, I couldn’t just do a classic bruschetta topping, so I decided to do a riff on my herby tomato salad and make a different kind of bruschetta addition to this toast.
This recipe might seem like a lot, but really it’s so simple. And it has gotten me SO excited for summer tomatoes. They are so close I can almost taste them!

Table of contents

Ingredients for this smoked salmon bruschetta
- 2 slices ciabatta bread
- 3 ounces smoked salmon
- 8 ounces cherry tomatoes
- 1 handful of fresh mixed herbs, I used mint, basil and thyme
- 1/4 tsp each of coriander and cumin
- 1 tbsp olive oil
- 1 tsp fresh lemon juice
- 1 clove garlic
- salt and pepper to taste

How to prepare the smoked salmon
In my video you can see I grill the smoked salmon, which is usually considered sacrilege, but it is SO GOOD. It makes the salmon crisp and salty, kind of like the bacon of the sea (lol) and it makes it a great counterpoint to the fresh, herby tomato salad.
You can grill your salmon as well, or leave as-is, it’s totally up to you!

How to prepare the tomato salad
The salad itself is very simple, just a few things to keep in mind as you make it
First, cut the tomatoes into quarters and add to a bowl. Roughly tear the herbs and add them in as well. You want to crush the herbs a bit with your hands to bring out the aromatics!.
Add the spices, olive oil, and lemon juice. Grate in the clove of garlic and toss. Season to taste. Don’t be shy to add salt to your liking, it really brings out the flavor of the tomato as well as the coriander and cumin.
