Butter and radishes have been a food match made in heaven for a long time, and that’s why I’ve been craving this dill butter and lemony radish combo for so long. Think of this as your classic radishes-dipped-in-butter (we can thank the French for that) but with a few extra additions.
I added dill and flakey salt to the butter, creating a combo that is satisfying on its own, but made all the better when you pair it with bright, spicy, slightly acidic radishes. The radishes on their own are crunchy and fresh, but I add an extra layer of lemon juice to bring out their pinkness, their flavor, and of course, the contrast with the butter.
It is imperative that the butter be served at room temp, and that the radishes be fresh. The beauty of this dill butter is that it is the perfect brunch because of its simplicity. It reminds me of home, it reminds me of lazy brunches, and I hope you’ll love it as much as I do.

Why do people eat radishes and butter together?
Butter and radishes is a classic French combination. The radishes are crispy, watery, spicy and fresh, and the butter is soft and sweet almost in contrast. Add in some flakey salt (the kind that crunches when you chew, it’s imperative) and you have the perfect Parisian snack…or just snack in general.
I was first introduced to this combination by Gabrielle Hamilton, the chef at Prune in NYC. To note, she did not personally introduce me, but I read an amazing article she wrote in tribute to the dish, and I haven’t been able to get it out of my head since.
So although this isn’t a perfect replica of the simple French classic that is radishes-and-butter, it is my version of one of the ultimate comforting snacks.
Ingredients you’ll need for the dill butter and lemony radishes
- 3 tbsp grass-fed butter, softened and cut into chunks
- 1/4 cup dill stems, removed and finely chopped
- 1/2 tsp flakey salt
- 1 lemon, for juicing
- 2 slices sourdough bread
How to bring each component of this butter and radish recipe together
There are multiple components to this dish, but they all are super quick to make. Here’s the step-by-step to bringing this recipe together:
- In a small bowl, add the butter, salt and dill. Make sure the dill is chopped into tiny pieces. Mix everything together with a wooden spoon until smooth. Set this aside
- Add the sliced radishes to another bowl and squeeze the juice of the lemon over them. Give them a stir and watch as they turn a slight pinkish hue 🙂
- Toast your bread to your liking, and slather with a generous serving of butter.
- Layer the radishes in a thin even layer, topped with more flakey salt if desired and eat warm!
